Description

The article presents a novel method for optimizing the extraction of antioxidants and colorants from jabuticaba peel, a by-product of fruit processing. This method enhances the efficiency and yield of valuable compounds, making the process more sustainable. By utilizing fruit waste, the approach contributes to waste reduction and adds economic value to the agricultural sector. The innovation demonstrates potential applications in the food, cosmetic, and pharmaceutical industries.

Pathway Description:

The process used in this project involves optimizing the extraction and purification of anthocyanins from jabuticaba peel, a fruit processing residue. The optimized extraction is achieved through maceration at 60°C for 40 minutes in a 50% methanol solution. Purification is conducted using a biosorbent derived from jabuticaba waste, which acts as a selective filter to remove impurities with 90% efficiency. This eco-friendly method outperforms traditional approaches and emphasizes sustainability while achieving high anthocyanin yields.
