Pathway Description: The process used in this project involves optimizing the extraction and purification of anthocyanins from jabuticaba peel, a fruit processing residue. The optimized extraction is achieved through maceration at 60°C for 40 minutes in a 50% methanol solution. Purification is conducted using a biosorbent derived from jabuticaba waste, which acts as a selective filter to remove impurities with 90% efficiency. This eco-friendly method outperforms traditional approaches and emphasizes sustainability while achieving high anthocyanin yields.
